Crazy Combo

Good Morning,

Inspired by last nights dinner and Tina @ Carrots N Cake, I used my leftovers in my smoothie this morning!

Sweet Potato Smoothie: Somewhat similar to Tina’s Smoothie but with strawberries added.

I was worried I may not like this as much as just a plain sweet potato but it was great!  I probably wouldn’t do this as a breakfast smoothie again, save it for the afternoon or for dessert.

Speaking of Crazy Combos, last nights dinner consisted of shrimp tossed in Evoo and a little bit of S&P.  I really wanted to cook with the shrimp I had bought earlier this week. 

So last night I kept thinking I didn’t want any brown rice or whole wheat pasta, what could I make for dinner?  I completely forgot I had sweet Potatoes…duh!  So, I made sweet potatoes for the bf and I with black beans.

  • Sweet potato
  • black beans
  • Sprinkle of cheese
  • Oikos plain Greek yogurt…No, it’s not sour cream…better than sour cream!

This is the best sweet potato I’ve had in a long time!  Chris (the bf) has never had a sweet potato and he loved it.  :)

This filled my tummy nicely, this potato was huge!

What kind of toppings do you like to put on your sweet potatoes or regular potatoes?

Oh wow I only JUST discovered how good sweet potato fries were so after seeing this I’m so going to try the actual thing! YUM my friend.

This looks like the greatest dinner- yum! On top of my sweet potatoes, I put a mixture of tomato sauce, chili powder, cumin, black or pinto beans and a little cheese. Josh does the same thing with some turkey! Delicious and filling.

I agree … love greek yogurt on potatoes and tacos, etc etc!

I’m glad your bf liked his sweet potatoes because they are oh-so-good!! : )

Mmm Dinner looks really good. I never thought of having black beans and sweet potatoes together, but it sounds good. I love shrimp cooked simply like that.

When I eat my sweet potatoes, I just use a little bit of butter and a sprinkle of sea salt.

I LOVE using greek yogurt instead of sour cream!! Sometimes I mix it w/ a bit of salt and it’s so good!!

sweet potatoes and black beans might be one of the world’s best combinations. I also love a little brown sugar. When I was younger, I would cover my sweet potatoes in marshmallow Fluff. that stuff rocked!
