Peas n Pasta

by Nicci on 09/29/2009

”Please No Peas Mom”… something I used to say when I was younger.   I still didn’t care for peas till tonight!!

I had a huge craving for cold pasta.

The first ”quick cold pasta dish” that came up with Google Search.  I ran to the store for frozen peas.  They were good in this dish too…still surprised!

Tuna Pasta Salad

  • 2 cups pasta
  • 2 cups peas
  • 2 cans tuna
  • 1 grated carrot
  • 1/2 cup light mayo
  • 1/2 cup Greek plain yogurt

(only thing missing was raisins)

I ate some leftover breaded tofu that was in the freezer.  I looked it up and learned that you can freeze tofu!!

I added another carrot to my meal.

I love peas! My favorite quick meal is whole wheat pasta with peas. Not the healthiest meal, but I’ll try to eat a veggie on the side too :)

That tuna pasta dish is one of my favorites. Smart ones frozen meals makes one, but I don’t like it if there is celery in it.

My fave healthy fill me up meal is a power house sandwich with sweet potato fries. This is a whole grain bread, cucumber, lettuce, sprouts, tomato, meunster cheese and hummus (usually). But you can put whatever veggies in that you like. It is so big I can barely take a bite.

That pasta dish looks so good. GRR my DVR cut off too early and I missed about 5 minutes of the ending of The Hills…going to look for it on the net =)

My healthy quick meals are
Veggie Stirfry
Roasted veggies with a Morningstar Farms product
Green Monster
Pasta dish loaded with veggies…
ohhh and any type of Panini!

Yum to the pasta dish. Looks great. My quick meals usually include rice or pasta with sauteed veggies on top. Or tacos, I love homemade tacos.

Mmmm I l-o-v-e tuna pasta! When I need something quick I throw together a quick tuna casserole (1 can mushroom soup, 1 can tuna, some cooked noodles, frozen peas, little bit of water to thin out mushroom soup if needed, shredded cheese, and cracker crumbs on top – 30 – 45 min. in oven). Delish and easy!

My favorite healthy quick meal is black bean soup with lots of vegetables.

And I have always loved peas! I can eat them straight from a can.

jessica September 29, 2009 at 8:12 pm

Oh, and peas. That’s why I said it was similar to your pasta in the first place :)

jessica September 29, 2009 at 8:12 pm

Yum to your pasta! I love to make a similar dish, but warm and minus the tuna and mayo. I saute whatever root veggies I have (onion, carrot) along with tomatoes, bell peppers, artichokes, eggplant…then toss with whole wheat penne and basil pesto. Totally filling and hearty.

I did not like the Hills without Lauren.

I like to do a pepper blend (previously frozen) mixed with refried beans and salsa as a quick meal.
