Smashing Pumpkin Soup

It’s not cold outside but I really wanted soup for lunch. I think it was time to use another can of Pumpkin.

Easy Smashing Pumpkin Soup

  1. one apple
  2. 1 can pumpkin
  3. 1 cup of Silk (soy milk)
  4. 1/3 onion
  5. 2 Tsp olive oil
  6. rosemary to taste
  7. pepper to taste
  8. brown sugar to taste

sautee onions and apple for 2 minutes in a pan. Stir in spices and stir in the onion and apple, until they’re soft.  Add in pumpkin and milk.  Bring to a boil, then simmer for 10-20 minutes. Then poor the mixture into a blender and puree till smooth or your liking. Coconut sprinkled on top!!

Girl, that soup looks amazing! I love the addition of the coconut and apple. What a great way to sweeten the soup – love it! Plus, the fact that you ate your soup with a bagel and cream cheese makes me think you’re even cooler than I initially thought! Please tell me you dipped your bagel into the soup bowl :) The cream cheese and pumpkin is a divine combination!!! Go NICCI!

I made the same idea (onion and apple base) but used delicata squash and veggie stock instead. It was DELISH. I’m sure yours was too!
