Ooops, I’m on a pasta kick. Two nights in a row, but in moderation/portion control.
I’ve always loved the deep purple color of the eggplant.
Breaded Eggplant w/ Spaghetti
- 1 eggplant
- 3/4 c. fine Italian bread crumbs
- 4 tbsp. olive oil
- 1 egg
- 1/4 c. freshly grated Parmesan cheese
- cilantro
- Basil and garlic salt to taste
- Salt and pepper to taste
Cut eggplant in 1/2 inch thick slices; set aside in pan. Line pan with fresh cilantro. Combine bread crumbs and spices. Dip eggplant in egg, then in bread crumbs. Remove excess and pat slices firmly so they are evenly coated. Layer Parmesan cheese on top of eggplant. Bake at 350 @45 minutes. (If you like you can add marinara sauce & more cheese).

- Spaghetti
- Fire roasted sweet red pepper sauce (I think we all know how to make spaghetti)
This sauce was really sweet too, loved it.
Feasting on eggplant with spaghetti and corn.
I loved every bite of this meal.

”Please No Peas Mom”… something I used to say when I was younger. I still didn’t care for peas till tonight!!
I had a huge craving for cold pasta.
The first ”quick cold pasta dish” that came up with Google Search. I ran to the store for frozen peas. They were good in this dish too…still surprised!
Tuna Pasta Salad
- 2 cups pasta
- 2 cups peas
- 2 cans tuna
- 1 grated carrot
- 1/2 cup light mayo
- 1/2 cup Greek plain yogurt
(only thing missing was raisins)
I ate some leftover breaded tofu that was in the freezer. I looked it up and learned that you can freeze tofu!!
I added another carrot to my meal.
Eating a VitaBrownie and counting down to ”The Hills”!!
I know your jealous of all the chocolaty goodness I’m enjoying right now.

”Pumpkin Head” the movie, always freaked me out! I’m not fond of scary pumpkins. Eecckk!
I used the last of my Trader Joes ”Black Mango Tea”, it was a sad, sad day. I made that tea last from March till now, so that’s pretty darn good. Maybe next year when I visit AZ, I’ll buy more boxes. I didn’t realize how much I would love that tea.

I finally popped open a can of pumpkin…Heaven!!
Yummy Pumpkin Oats
- 1 cup of oats
- 1/2 cup of water
- 1/2 cup Silk
- 1/4 cup of pumpkin
I was so happy I had time this morning, to sit and enjoy breakfast. Usually I eat in the car or in my office at work.
I did a quick 25 minutes of Level 1 Shred, not soar anymore. I usually find the Shred to be brutal on my knees, but it wasn’t too bad this last time around.
Packed lunch and headed out the door!

I was in high spirits today considering I forgot I had a board meeting tonight.

I lucked out on not having to cook dinner, since the office orders on meeting nights. Plus Chris went to a friends to watch the Cowboys game. GO COWBOYS!!
I brought home a delicious Greek Chicken wrap w/ a cup of broccoli & cheese soup from McAllister’s deli.
Along with their wimpy fruit cup
I said hold the Cesar dressing on the side. I think they want to kill me with all of this!
Look at the size compared to the soup OMG! I changed my mind and didn’t use it.
Overall it was great but their Greek pita is the best, I’ll stick with that next time.
Plus I got a oatmeal raisin cookie, which I’m saving for Cookie Friday…hope it lasts till then.
Finally I’m home and I plan to sit back and watch Gossip Girl

I’m so tempted to eat this for dessert, but I’m going to save it for later also. lol
