Craft Corner!

All that ribbon was purchased today, at the dollar tree…can you ever have enough?

I plan to to get crafty and enjoy the three day holiday weekend, away from the office.

I still haven’t decided what exactly I’m making but I’m sure it’s jewelry related.

Tonight Chris and I went to Fuzzy’s Taco Shop….delicious  and yet plenty of healthy, inexpensive menu options.

Chris has been  talking about Fuzzy’s for weeks now, so tonight we dined.

Yes, I did eat Fuzzy’s earlier with coworkers….it’s just that dang good.  I even had the same plate of grilled shrimp tacos too!  Can you even see the grilled shrimp…it’s hidden very well.

My kind of taco filled with lettuce and cilantro!

Anyways, I’m excited for July 1st tomorrow and have a few things I need to work on:

Cooking:  We’ve been eating out a lot with friends . As much as I love the company…cutting back and saving $$ would be nice.   I plan to have a dinner nights, at home and invite friends over; incorporating  games after dessert.

Sounds like a good idea…plus it’s still incorporating ‘’friend time’’.

Reading: I keep downloading books onto my Kindle. I promised myself, no more books till I finish the new three, recently  downloaded .

Yoga: I already know, transitioning from one position at work to another…will require morning ZEN and ice coffee. Smile  I wish I could go into details about the strange/quirky people, I encounter at the office daily. (that would make a great 2nd blog) ha-ha.

Any plans for the holiday weekend? I plan to go swimming, eat grilled corn ,fruit salad and watch some FC Dallas soccer!

Fish Sticks The Clean Eating Way

by Nicci on 05/16/2011

Do you ever eat fish sticks as a kid?  I remember eating them a couple times, but only at a restaurant.

Well tonight, Chris and I ate a cleaner, healthier recipe. I had tilapia filets sitting in the freezer and I wasn’t feeling grilled or broiled tilapia tonight…kind of boring.

Food:

Fish Sticks

Recipe:

  • 3 Tilapia filets (serves 2)
  • 3 slices of whole wheat bread
  • 1 egg
  • seasoning of choice

Directions: Use a food processor to make your slices of bread into crumbs. Mix egg and bread crumbs, in a bowl. Chop tilapia until it is fine, then dip in bread mixture. Shape fish sticks into rectangular shape, add sticks to lightly oiled skillet. Brown  on each side for 4 minutes until golden brown.

Fitness: Monday’s Fit Camp was brutal but I did burn 700 calories.

Complete each set 2-3 times

  • Jump rope x 30, squat press x 8
  • Tire pull, froggers x 8
  • Push ups X 10, hose X 20
  • Burpees x 8,  shoulder press 7-6-5-4-3-2-1 front, side, back
  • Arc Trainer, 40 resistance for 60 sec. staying above 130 in between each workout set.

Great workout and dinner to end Monday!

Please Pass the Wild Rice

by Nicci on 03/09/2011

I’m in the second week of fit camp (aka Booty camp) and things are going great!  Tonight night we had the pleasure of pulling tires…not my idea of fun but I pushed through and pulled that tire pretty fast down the parking lot.  Followed by running hills which left my legs feeling like Jell-O.

The thought of working out today was far from my mind, but I knew I wouldn’t regret sweating after it ended.

I’m loving that I’m staying motivated and working out with 4 other coworkers.

Workout buddies are great for motivating you to push yourself.

Tonight’s dinner:

My current love for wild rice!

Rice and Shrimp Dinner

Wild Rice, grilled shrimp with sautéed okra and bell peppers.

Happy to eat a clean meal and go to bed…after some Law & Order: SVU re-runs. Smile

G’night.
