Mushroom Bean Burger
Mushrooms were on sale at Central Market this past weekend and I’ve been craving them like crazy. I love a delicious and filling meatless burger on a bed of fresh mixed greens with veggie cheese.
Ingredients: 1 cup mushrooms, 1 cup kidney beans, 1 egg, 1/2 cup bread crumbs, dried oregano & parsley. Directions: Saute mushrooms in olive oil for 5 minutes, combine all ingredients in food processor then make into patties (4), pan fry until brown on each side.
Any meal that takes less than 30 minutes to prepare is my friend. This burger with a side of sweet potato fries is perfect for a grill out on a weekend adfternoon!

YUM. I love making new veggie bean burgers. I make up large batches and keep them in the freezer for quick, easy dinners.

Okay, now THAT’S a veggie burger my husband would like. He’s a meat lover but you say ‘mushroom’ and he’s all over it.

That looks rediculously delish. I have yet to try making my own meatless burgers from scratch, but I think I might have to give this one a try.

Umm, those sound amazing and super simple. I’ve made homemade veggie burgers but only with beans. Mushrooms sound like a fantastic addition!

I have some mushrooms in my fridge that I was just thinking I needed to do something fun with (other than sautee them and put them in a quesadilla or omelet). This is PERFECT… is it sad that I want to go to bed now so tomorrow will come faster (wait… don’t answer that!)
