Please Pass the Wild Rice

by Nicci on 03/09/2011

I’m in the second week of fit camp (aka Booty camp) and things are going great!  Tonight night we had the pleasure of pulling tires…not my idea of fun but I pushed through and pulled that tire pretty fast down the parking lot.  Followed by running hills which left my legs feeling like Jell-O.

The thought of working out today was far from my mind, but I knew I wouldn’t regret sweating after it ended.

I’m loving that I’m staying motivated and working out with 4 other coworkers.

Workout buddies are great for motivating you to push yourself.

Tonight’s dinner:

My current love for wild rice!

Rice and Shrimp Dinner

Wild Rice, grilled shrimp with sautéed okra and bell peppers.

Happy to eat a clean meal and go to bed…after some Law & Order: SVU re-runs. Smile

Hi! I just came across your blog. The only okra I’ve ever had is fried, but perhaps I should try it sauteed??

Your dinner looks delicious! I have to admit, I haven’t ever had okra, does that make me weird?

P.S. I thoroughly enjoy Law & Order reruns, but unfortunately my husband does not, lol.

That dinner looks great. I like how the okra gives it a nice color but the shape is so fun too.

Yay for booty camp!

your meal looks fantabulous. I have never had okra before.

You must try okra, I love it! It’s good tossed in the oven like fries with a pinch of sea salt and pepper.

So glad to hear you’re rocking the boot camp!!! And I’m having a tiny obsession with crab/shrimp right now, so the grilled shrimp in this dish looks just awesome to me!!

What do you do to the rice? Is it already “wild?” LOL! What brand is it? It looks delicious with that shrimp!!

I bought the Uncle Ben’s Wild Rice, instant pack. I love those for quick meals.
